Oprah’s Turkey Meatballs

My mission to find low-carbs recipes has taken on a life of it’s own.  You can’t imagine how hard it is to find a recipe that is low on the glycemic index, does not include red meat and is non-dairy.  Luckily G and me love chicken, fish and vegetables, so we don’t mind having that for dinner most nights.  Where it gets tricky is when we have to find a dish to take to parties and BBQ’s.  This weekend we had baby Olivia’s 2nd birthday party so early in the week I began my search for a yummy birthday party dish.

A few weeks ago, Albertson’s was having a sale on their turkey meat so I bought a ton of it (seriously… like 12lbs of the stuff – it was a great deal).  Since then the only thing I’ve made with my ton-o-turkey has been meatloaf.  In my attempt to make a little freezer space, I went in search of turkey meat recipes and that’s when I came across Oprah’s favorite turkey meatball recipe on her website!  If you’ve never substituted ground beef with turkey meat you should know that it does taste a bit different.  The good news is that turkey is a much healthier option and is still very delicious!   

Here’s what you’ll need:

~ 4lbs ground turkey
~ 1 medium red onion, chopped
~ 1 red pepper, chopped
~ 1 green pepper, chopped
~ 3/4 cup green chile, chopped
~ 1/2 cup parsley, chopped
~ 4 cloves of garlic, chopped
~ 3 eggs
~ 3 tsp. garlic salt
~ 1 tsp. ground pepper
~ 2 tbs. Olive oil
~ 1 cup fat free saltine crackers, crushed
~ Marinara sauce
~ Parmesan cheese
What to do:

Pre-heat oven to 350 degrees.
Using a food processor, chop onions, peppers and green chile.

You may need a knife to finely chop the green chile if your processor leaves the pieces too large.

In a small bowl beat eggs, olive oil, garlic salt and pepper.
In a large bowl mix turkey meat, onion, peppers, chile, parsley and garlic.
Combine ingredients adding in the crushed saltine crackers.

Using your hands, shape mixture into balls and place each in an oven safe dish.

Cover with foil and cook for 35 minutes at 350 degrees.  Cut one of your meatballs open to check that it is cooked.  You may need to cover and cook for another 10 minutes if necessary.

Remove foil and pour the marinara sauce on your meatballs.  Cook uncovered for 15 minutes.
When finished remove from oven and sprinkle with parmesan cheese.
